Preheat your oven to 180ºC and grease a large baking dish
Halve your hot cross buns in the middle and then half again, butter each side and begin to place in the baking dish making sure they all over lap in rows. Sprinkle over some chocolate chips as you go. Pile all the hot cross on top of each other until they are all used.
In a bowl, whisk together the milk, double cream, eggs, sugar and vanilla until combined and pour the mixture over the hot cross buns and sprinkle over some more chocolate chips.
Bake in the oven for 40 minutes, and then remove and leave to cool for 10 minutes.
Sprinkle over some icing sugar and serve! We served with cream, some flaked almonds and a spring of mint for garnish.
