Innovation begins with understanding the world around us. We closely examine both market and food trends to identify emerging consumer preferences, seasonal demands, and untapped opportunities.

We then transform these insights into deliciously creative product ideas. This stage is all about brainstorming and innovation – taking inspiration from global influences, consumer desires, and food science to craft exciting, on-trend concepts. We leverage global trends data and conduct real-time gap menu analysis, depending on what sector is the focus.

Development, Screening & Research


Our ideas then go through a rigorous development process. We create bespoke products tailored to specific market needs, screen concepts to identify the most promising ones and conduct thorough research to ensure feasibility, quality, and consumer appeal. This process involves engaging over 60 of the Finsbury specialists to develop our exciting new products through the manufacturing blueprint process, supporting the production of high-quality premium products.

Launch & Review

With everything perfected, we bring our creations to life! Once launched, we closely monitor their performance in the market, gathering feedback and analysing results, ensuring every product meets our high standards for quality, taste, and customer satisfaction. Working retroactively like this has seen a 3% reduction in complaints year-on-year, nine awards for our bakery products across the business and a sales-weighted average sugar reduction of 13+%. Although we’re forward-thinking, reviewing our progress is crucial to future success.
